Applesauce Cake

Ingredients:

2 cups flour

2 tsp. baking powder

1 tsp. baking soda

1 tsp. cinnamon

1 tsp. allspice

Dash of salt

½ tsp. ground ginger

½ cup Truvia – brown sugar substitute

2 large eggs

1 1/3 cups unsweetened applesauce

1 tsp. vanilla extract

1 tbsp. rum
-
½ cup raisins
-
½ cup chopped walnuts
-
1 cup sugar-free whipped topping
Directions:
1. Preheat the oven to 350 degrees.
2. Coat a loaf pan with non-stick spray.
3. Next, combine the flour, allspice, cinnamon, baking powder, baking soda, salt, and ginger. Set aside.
4. Whisk the eggs and Truvia in a separate bowl.
5. Stir in the applesauce, vanilla, and rum.
6. Then, gradually add the flour mixture to your egg mixture.
7. Stir in the raisins and chopped walnuts
8. Bake for 1 hour.
9. Top with sugar-free whipped topping.
