Makes 6 to 8 servings
2/3 c. olive oil
1/4 c. vinegar
1 clove garlic, minced
1/2 t. salt
pepper to taste
3 T. fresh basil, chopped
1/4 c. onion, chopped
1-1/2 c. mozzarella cheese cubes
1 pt. cherry tomatoes, halved
Whisk together oil, vinegar, garlic, salt and pepper in a medium bowl. Stir in basil and onion. Add cheese and tomatoes; toss to mix. Chill.
