Makes 6 servings
6 to 8 new potatoes, peeled, boiled and thinly sliced
10 slices bacon, chopped
1 red onion, finely chopped
4 t. all-purpose flour
1 T. sugar
salt and pepper to taste
1/2 c. cider vinegar
1/2 c. water
1/4 c. fresh parsley, minced
1 t. celery seed
Place warm potato slices in a large bowl; set aside. Cook bacon until crisp in a skillet over medium heat. Add onion and cook for one minute; stir in flour, sugar, salt and pepper. Mix together vinegar and water; pour over mixture in skillet. Stir until thickened; pour over potatoes and toss gently. Stir in parsley and celery seed. Serve warm.
A splash of ginger ale in orange juice makes a refreshing beverage to accompany a cookout meal. Serve in tall glasses with lots of ice…aah!
