Deluxe Grilled Chicken Sandwich

WITH FRESH TOMATO SLICES AND TANGY RANCH DRESSING, THIS FRESH CHICKEN BREAST SANDWICH IS A HEALTHY CHOICE FOR LUNCH OR DINNER AND IS JUST AS TASTY AS IT IS NUTRITIOUS.

1 (8-ounce) boneless skinless chicken breast 1 / 2 teaspoon seasoned salt, such as Lawr y’ s 1 / 4 teaspoon pepper 2 whole wheat hamburger buns, split in half 2 teaspoons unsalted butter, melted 2 tablespoons ranch dressing

6 slices dill pickle

2 thick tomato slices

1 leaf iceberg lettuce, halved

1. Light a charcoal barbecue or heat a gas grill to medium. Clean the grate and coat it with vegetable oil.

2. Split the chicken breast and lightly pound each half between 2 pieces of plastic wrap. The chicken should be evenly flattened to ensure proper cooking. Sprinkle both sides with the seasoned salt and pepper.

3. Grill the chicken 6 to 7 minutes per side, or until cooked through and no longer pink in the center.

4. While the chicken is cooking, coat each half of the hamburger buns with some of the melted butter. Grill the buns over medium heat, taking care to not let them burn. They should be lightly toasted.

5. Spoon some of the ranch dressing on the bottom of each toasted bun. Layer each half with 3 of the pickle slices.

6. Put the cooked chicken on top of the pickles, then top with a slice of tomato and the iceberg lettuce. Spread the top halves of the buns with the remaining ranch dressing and place them over the assembled sandwich.

7. Serve warm.
