Broiled Salmon with Garlic Butter

WHEN LOOKING FOR A DINNER THA T’ S HEALTHY, QUICK, AND MEMORABLE, LOOK NO FURTHER THAN THIS APPLEBE E’ S FAVORITE. GRILLING OR BROILING FISH IS NOT ONLY A MORE HEALTHFUL WAY TO COOK, BUT IT IMPARTS A SMOKY ESSENCE THAT CAN ONLY COME FROM THE GRILL.

1 / 2 teaspoon kosher salt 1 / 4 teaspoon pepper 1 / 4 teaspoon granulated garlic 4 tablespoons unsalted butter, softened

4 (5-ounce) salmon fillets

1 teaspoon fresh lemon juice

1. Light a charcoal barbecue or heat a gas grill to medium. Clean the grate and coat it with vegetable oil.

2. Blend the salt, pepper, and garlic with the butter.

3. Using the back of a teaspoon, spread about a tablespoon of the seasoned butter over each fillet. Refrigerate the salmon until ready to use, or until the butter on each piece has chilled.

4. Put the remaining butter and the lemon juice in a small skillet or saucepan and set it on the side of the grill to melt.

5. Grill the salmon 3 to 4 minutes, butter side down. Using a wide, flexible spatula, turn the fish over and grill the other side for 3 to 4 minutes. Baste occasionally with the lemon butter while grilling.

6. The salmon is done when it is just slightly translucent in the center. You can take it off the grill a bit underdone and it will finish cooking on a warmed platter.

7. Baste the top of the salmon one last time before serving.

8. Serve hot.
