1 tablespoon olive oil

1 large clove garlic, finely minced 1 large yellow onion, sliced

1 tablespoon yellow mustard

4 tablespoons mayonnaise

12 ounces fresh ground beef or chuck 1 / 2 teaspoon kosher salt 1 / 4 teaspoon pepper 1 / 4 teaspoon granulated garlic 2 tablespoons unsalted butter

4 slices Italian bread

4 slices Swiss cheese

4 slices Cheddar cheese

1. Heat the olive oil in a medium skillet over medium-low heat. Add the minced garlic and sauté until completely softened and lightly browned. Remove with a slotted spoon and let cool.

2. Add the sliced onion to the skillet and sauté over medium heat until soft and golden.

3. Add the cooked garlic and mustard to the mayonnaise and blend in a food processor or blender. Set aside.

4. Light a charcoal barbecue or heat a gas grill to medium. Clean the grate and coat with vegetable oil.

5. Divide the beef into 2 equal pieces and form into patties. Season with the salt, pepper, and granulated garlic. Grill the patties 4 to 5 minutes per side, or until cooked to desired doneness, then set aside.

6. Melt 1 tablespoon of the butter in a large skillet and toast 2 pieces of bread on one side. Spread the other side of the bread with a teaspoon of the garlic mayonnaise. Put 2 slices of Swiss cheese on one piece of bread and 2 slices of Cheddar on the other piece of bread.
