Bratwurst with Tomato Pepper Relish

COMBINATION OF SAUSAGE AND TOMATOES, ONIONS, AND HERBS WILL SOON FIND

ITS PLACE IN YOUR ONCE-A-WEEK FILE.

1 (19-ounce) package Bob Evans Bratwurst, or other bratwurst 1 1 / 2 cups halved cherry tomatoes 1 / 4 cup diced sweet onion 1 small green bell pepper, seeded and diced

1 teaspoon minced fresh thyme

2 tablespoons Italian dressing

1. Heat 1 / 2 cup water in a large skillet over medium heat. When it simmers, add the bratwurst and cook, turning occasionally. Add a little more water, if necessary.

2. Light a charcoal barbecue or heat a gas grill to medium. Clean the grate and coat it with vegetable oil.

3. Grill the bratwurst for 5 to 10 minutes, or until cooked through.

4. Combine the tomatoes, onion, bell pepper, thyme, and dressing. Toss until well combined, and serve with the grilled bratwurst.

Serves 4 to 6

You can alter the vegetables according to what you have on hand or what looks

best in the market. Cucumbers, corn, and sweet peppers are good choices. Basil,

parsley, and chives are fresh alternatives to thyme.
