ahead:
To
make
the
Angry
Sauce, whisk
together
the
ketchup,
mustard,
and
mayonnaise
until
well
blended.
Stir
in
the
brown sugar,
hot
sauce,
cayenne,
and
chili
powder.
Set
aside
or
refrigerate,
covered,
until ready
to
use.
3. Do ahead: Prepare the components for the Spicy Onion Rings so they can be fried as your burger is finishing on the grill. Whisk the flour, cornstarch, chili powder, baking powder, baking soda, bread crumbs, salt, and pepper together until well blended. Whisk the beaten egg with the milk, then stir the dry ingr edients into the egg mixture. Beat only until the lumps are dissolved.
4. Heat the vegetable oil in a small saucepan and keep over a low flame while burgers are cooking. Turn the heat to medium-high (375°F) before you fry the onions.
5. Dip the onion rings into the batter, then fry until browned on both sides, turning once. Drain on paper towels and keep warm in a low oven.
6. Light a charcoal barbecue or heat a gas grill to medium. Clean the grate and coat it with vegetable oil.
7. Grill the patties 3 to 4 minutes per side for medium, or until cooked to your preferred doneness.
8. Remove the burgers and keep them warm. Grill the hamburger buns until lightly toasted.
9. Spread a spoonful of Angry Sauce on the bottom bun and top with a grilled patty. Layer with the habañero cheese, sliced jalapeños, 2 bacon slices, 2 onion rings, tomato, and lettuce.
10. Spread some Angry Sauce on the top bun and finish the sandwich.
11. Enjoy immediately!

Go all the way and make a bunch of onion rings to go with your burger. Prepare
1 extra onion as noted above and serve crispy and hot. Ify ou ca n ’ t find
habañero Jack cheese, it is also made with Cheddar. If neither of those are
available, use pepper Jack for your Angry Whopper.
