Jamaican Jerk Chicken Pizza
JERK SEASONING IS THE KEY TO THIS RECIPE. YOU CAN FIND IT AT SPECIALTY STORES
OR LARGER SUPERMARKETS, OR ONLINE FROM SPICE AND HERB RETAILERS.
Caribbean Sauce
1 / 2 cup Asian-style sweet red chili sauce
1 teaspoon Jamaican jerk seasoning
1 tablespoon cold water
1 teaspoon cornstarch
1 (8-ounce) package refrigerated or frozen pizza dough, split into 3 pieces
1 (8-ounce) boneless skinless chicken breast
1 tablespoon vegetable oil
1 tablespoon Jamaican jerk seasoning
1 / 4 teaspoon cayenne pepper
1 small red bell pepper, seeded and cut in half
1 small yellow bell pepper, seeded and cut in half
1 / 4 cup all-purpose flour
1 / 2 cup Caribbean Sauce
1 1 / 2 cups shredded mozzarella,
1 small white onion, sliced 1 / 4 -inch thick
1 / 2 cup diced bacon, about 8 slices, fried crisp
1 green onion, chopped
This recipe will come out best by using a pizza stone and a pizza peel for transferring the pie to the hot oven. Or you can also use 1 large or 2 small sheet pans, turned upside down and lightly oiled. If you have a pizza stone, center it in the oven and heat at 500°F for 1 hour before baking the pizzas.
