7. Grill the sirloin steaks 3 to 4 minutes per side, or until cooked to your preferred doneness. Set the steaks on warmed plates while you finish the chicken.

8. Increase the temperature to medium low, and when the sauce bubbles, whisk in the cubed butter, one piece at a time.

9. When all the butter has been incorporated, put a breast on the plate with the steak and spoon the mushroom sauce over each piece of chicken. Sprinkle with the chopped parsley and serve hot.

There are n t any really good substitutes for Marsala. In a pinch, you can use sweet sherry or mirin, a sweet Japanese rice wine, but they are not at all close to the real deal. Marsala is inexpensive and wo n t go bad. You may find a use for it with other chicken dishes, or veal and pork cutlets, so do make an effort to get it.
