Flip
the
tortillas
on
the
hot
grill
just
long
enough
to
heat
through
and
soften
them.
7. Divide the grilled vegetables among the 4 tortillas by putting a strip each of zucchini, squash, and red pepper in the center of each tortilla.
8. Place a few spoonfuls of the Avocado Corn Relish over the vegetables and top with some of the tomatillo salsa. Any remaining relish can be refrigerated in an airtight container for 4 days.
9. Fold the bottom quarter of each tortilla up, then close the left and right sides and roll the tortilla up into a burrito. Serve hot or at room temperature.
