Margarita Marinade

USE THIS MARINADE FOR SKIRT STEAK FAJITAS OR FLANK STEAK. THE LIME AND

ORANGE JUICES WORK AS TENDERIZERS ON NORMALLY TOUGH CUTS OF MEAT.

1 / 4 cup orange juice 1 / 4 cup lime juice 1 / 4 cup tequila 2 tablespoons extra virgin olive oil

1 large clove garlic, minced

1 tablespoon brown sugar

1 tablespoon lime zest

1 (10-ounce) can diced tomatoes with green chilies, drained 1. Whisk together all the ingredients and refrigerate in an airtight container. Shake the container occasionally to mix the ingredients.

2. Discard the marinade after using for beef, chicken, or pork. Any unused portion may be briefly simmered and used as a sauce or dressing.

Makes about 2 cups

The marinade may be refrigeratedf or up to 5 days.
