Grilled Red Potatoes

1 large red potato, scrubbed

1 / 2 teaspoon kosher salt 1 / 4 teaspoon pepper

1 tablespoon unsalted butter

1 / 4 teaspoon chicken bouillon powder 1 / 4 teaspoon dried oregano 1 / 4 teaspoon dried basil 1. Light a charcoal barbecue or heat a gas grill to medium. Clean the grate and coat it with vegetable oil.

2. Cut the potato in half lengthwise then slice each half very thin. Season with the salt and pepper.

3. Cut a length of aluminum foil. Shingle the sliced potatoes down the center of the foil and top with the butter, bouillon powder, oregano, and basil.

4. Roll the edges of the foil up tightly to form a packet. Put the packet on the hot grill and cook for about 20 minutes, or until the potatoes are tender.

Makes 1 serving

Add a few hickory chips to the grill and close the lid to give the potatoes a slightly smoky flavor.
