Grilled Peaches with Vanilla Bean Ice Cream
PEACHES AND ICE CREAM MAKE FOR A SIMPLE YET ELEGANT DESSERT. MAKE THIS ONLY DURI NG PEACH SEASON; ANYTHING LESS THAN PERFECTLY RIPE FRUIT WILL NOT BE THE SAME.
1 / 4 cup balsamic vinegar 1 / 4 cup Tupelo honey 6 ripe peaches, halved and pitted
6 scoops premium vanilla ice cream Sprig of mint
1 / 2 cup warm caramel sauce, optional 1. Light a charcoal barbecue or heat a gas grill to medium. Clean the grate and coat it with vegetable oil.
2. Stir together the balsamic vinegar and honey until well blended. Coat the peach halves with the mixture.
3. Grill the peaches, cut side down, for 4 to 5 minutes, or until soft. Baste with the honey mixture as they grill.
4. Place a portion of ice cream in a chilled bowl and top with a grilled peach. Garnish with the mint sprig, and drizzle with the caramel sauce, if desired.
