Bar-B-Q Bacon Big Angus Burger

KRYSTAL IS A LEGEND IN TENNESSEE AND THE SOUTH. IT STARTED IN THE MIDST OF THE DEPRESSION AND, RECENTLY, WAS THE FIRST OF THE MAJOR CHAINS TO OFFER FREE WI- FI. THEY MAKE A WIDE RANGE OF BURGERS AND BREAKFASTS, AND HOT DOGS AND WINGS ARE ON THE MENU AS WELL.

1 / 2 pound ground Angus beef 1 / 2 teaspoon kosher salt 1 / 4 teaspoon pepper 2 slices American cheese

4 slices Smithfield bacon, cooked crisp 2 hamburger buns, split in half

4 tablespoons sweet-and-spicy barbecue sauce 6 dill pickle chips

1 large leaf iceberg lettuce, halved 1 romaine leaf, halved

6 grape or cherry tomatoes, diced

1. Combine the ground beef with the salt and pepper. Use your hands to gently mix the ingredients. Mix until just blended, then form 2 patties and refrigerate them for at least 30 minutes.

2. Light a charcoal barbecue or heat a gas grill to medium. Clean the grate and coat it with vegetable oil.

3. Grill the patties 3 to 4 minutes per side, turning once, or until cooked to your preferred doneness. Place a slice of cheese and 2 strips of the bacon on each patty and set them aside to keep warm.

4. Place the buns on the grill and let them lightly toast, taking care to not let them burn.

5. To assemble the burgers, spread the bottom half of each bun with barbecue sauce, followed by the cooked patty with the cheese and bacon.

6. Top the bacon with the pickles, lettuces, and diced tomatoes.

7. Spoon more barbecue sauce on top of the tomatoes and finish with the top half of the bun. Serve hot.
