Grilled vegetables

1. Do ahead: Combine all the ingredients in the Chicken Marinade, including the adobo sauce from the can of chipotles, in a blender and pulse until completely smooth. Pour the mixture into a glass baking dish and add the chicken in a single layer. Turn the breasts over to coat them, then cover the dish and refrigerate at least 4 hours, or overnight.

2. Do ahead: To make the Cilantro-Lime Rice, heat the canola oil in a medium saucepan and sauté the rice until lightly browned. Season with the salt and pepper, then pour in the hot broth, lime juice, and lime zest. Bring the pan to a boil, then cover it and reduce the heat to the lowest setting. Cook for 20 minutes. Stir the rice to fluff it with a fork, then set it aside. Blend in the cilantro just before serving.

3. Light a charcoal barbecue or heat a gas grill to medium. Clean the grate and coat it with vegetable oil.

4. Shake the excess marinade from the breasts and grill them for 5 to 6 minutes per side, turning once, or until cooked through and no longer pink in the center. Let the chicken rest for 10 minutes before cutting into thin strips or slices.

5. Heat the Black Beans with the spices. Set aside and keep warm until ready to use, or refrigerate, covered, and reheat before making the burritos.

6. For the 3-Cheese Sauce, dice the poblanos and add them to a large saucepan with the tomatoes, garlic, onion, salt, paprika, cayenne, and water. Simmer the mixture for 3 to 5 minutes.

7. Whisk together the shredded cheeses and the cooking creme. When thoroughly blended, stir the mixture into the saucepan. Continue to stir until the cheese is melted and the sauce is smooth and creamy. Keep the heat low, so that the sauce does n’ t break.

8. To assemble the burritos, heat the tortillas in the microwave or toss them on the grill for a few seconds per side; they should be flexible, not crispy.

9. Lay each tortilla on a work surface and spoon a portion of the Cilantro-Lime Rice in the center and top it with a portion of the Black Beans.

10. Follow the beans with about 1 / 2 cup of the 3-Cheese Sauce, more or less to your taste, then arrange the sliced chicken on top.
