Cod Grilled in Foil

THE DELICATE FLESH OF FRESH ATLANTIC COD IS MOIST AND TENDER. ALTHOUGH

DIFFICULT TO COOK DIRECTLY ON THE GRILL, IT WILL ABSORB THE SMOKY ESSENCE

OF A CHARCOAL FIRE AS IT STEAMS IN FOIL PACKED WITH LEMON AND PARSLEY.

2 tablespoons unsalted butter, melted

1 / 4 cup fresh lemon juice 1 tablespoon chopped fresh parsley

1 teaspoon sea salt

1 / 4 teaspoon ground white pepper 1 / 4 teaspoon sweet paprika 1 medium sweet onion, sliced thin

4 (6-ounce) cod fillets

1 lemon, quartered

1. Light a charcoal barbecue or heat a gas grill to medium. Clean the grate and coat it with vegetable oil to keep the foil packets from sticking.

2. Cut 4 squares of heavy-duty foil large enough to surround the pieces of fish.

3. Whisk the melted butter with the lemon juice, parsley, salt, pepper, and paprika.

4. Arrange the onion slices in the center of each piece of foil. Top with a piece of cod and spoon some of the butter sauce over each piece.

5. Wrap the fish tightly in the foil and grill for 8 to 10 minutes, or until the fish flakes easily when lightly pressed.

6. Serve guests a packet to open themselves and add a wedge of lemon to each plate.
