Turkey Burger

A PERFECT OPTION FOR NONBEEF EATERS. RUBY TUESDAY BLENDS RED PEPPER AND

CHEESE CRACKERS INTO THEIR PATTIES. GIVE THIS ONE A TRY.

1 pound ground turkey

1 tablespoon granulated garlic

1 tablespoon red pepper flakes

1 teaspoon minced dried onion

1 large egg, well beaten

1 / 2 teaspoon kosher salt 1 / 4 teaspoon pepper 1 / 2 cup cheese crackers, such as Keebler or Goldfish Cheddar 4 hamburger buns, split in half

4 leaves iceberg lettuce

4 thick slices tomato

4 1 / 4 -inch-thick slices red onion 8 pieces dill pickle chips

Garlic Mayo

1 / 4 cup mayonnaise, regular or reduced fat 1 teaspoon granulated garlic

1 teaspoon lemon juice

1. Do ahead: Combine the ground turkey, garlic, pepper flakes, dried onion, egg, salt, pepper, and crushed crackers in a medium bowl. Blend the mixture with your hands and form 4 equal-sized patties. Put the patties on a sheet of waxed paper and refrigerate them, covered, until ready to use.

2. Do ahead: To make the Garlic Mayo, whisk together the mayonnaise with the garlic and lemon juice and refrigerate, covered, until ready to use.

3. Light a charcoal barbecue or heat a gas grill to medium. Clean the grate and coat it with vegetable oil.

4. Grill the turkey patties 5 to 6 minutes per side, turning once, or until cooked through and no longer pink in the center.

5. Grill the hamburger buns until lightly toasted, taking care to not burn the bread.
