Asian Chicken Wrap

THEY OFFER THIS CHICKEN WRAP WITH A SLIGHTLY DIFFERENT TWIST, USING A SAVORY
TONKATSU SAUCE.
Tonkatsu Sauce
1 / 2 cup ketchup or chili sauce 1 / 4 cup Worcestershire sauce 1 / 4 cup sake or
dry vermouth 3 large cloves garlic, minced 1-inch piece ginger, peeled and minced
2 tablespoons dark brown sugar
2 tablespoons mirin or sherry
2 (8-ounce) boneless skinless chicken breasts 1 teaspoon kosher salt
1 / 2 teaspoon pepper 4 (10-inch) flour tortillas

2 cups shredded mixed greens
1 small carrot, julienned
2 tablespoons chopped cilantro
1 / 4 cup slivered almonds, toasted 1 small red bell pepper, seeded and diced 1 teaspoon kosher salt
1 / 4 teaspoon pepper 1. Do ahead: Combine the ingredients for the Tonkatsu Sauce in a small saucepan. Whisk vigorously and bring the pan to a boil. Reduce the heat and simmer for 20 minutes. Let the sauce cool completely, then refrigerate in a tightly covered container until ready to use.
2. Pour 1 / 2 cup Tonkatsu Sauce into a resealable plastic bag. Add the chicken breasts and massage the sauce all around each one. Seal the bag and refrigerate at least 1 hour. Reserve the remaining sauce.
3. Light a charcoal barbecue or heat a gas grill to medium. Clean the grate and coat it with vegetable oil.
