ONE OF THE MANY SAUCES DEVELOPED AT TONY ROM A’ S OVER THE YEARS IS THIS

SMOKY SAUCE, REMINISCENT OF WHA T’ S TRADITIONALLY PREPARED IN SOUTHERN

VIRGINIA AND NORTHERN TENNESSEE.

1 cup ketchup

1 cup red wine vinegar

1 / 4 cup dark molasses 1 teaspoon liquid smoke flavoring

1 teaspoon kosher salt

1 / 2 teaspoon pepper 1 / 4 teaspoon granulated garlic 1 / 2 teaspoon onion powder 1. Whisk together all the ingredients in a small saucepan over medium-high heat and bring to a boil.

2. Lower the heat and simmer for 20 to 30 minutes, or until the sauce has thickened.

3. Use the sauce to brush on grilled pork ribs and beef ribs.
