Chicken Kondattam
Kerala’s Spicy Hot Dry Chicken
Recipe:
Prep: Mix 500g chopped boneless chicken
cubes, 1Tbsp each (ginger-garlic
paste, kashmiri chilli powder
), 1tsp each (coriander powder, pepper powder, soy sauce
), 1/4tsp each (salt, turmeric
)
In a 2L Magic pot deluxe
layer as below,
- 1Tbsp each (coconut oil, water
)
- 1/4C chopped shallots
, 10 curry leaves
- 1Tbsp each chopped (ginger, garlic, red chilli
)
- Spiced chicken
Cook on high for 5 whistles / 5 mins
Release pressure. Mix in 1Tbsp coconut oil,
20 curry leaves
& serve.
Replace / supplement:
Chicken with quail
Shallots with onions
Tips:
Cooking time and whistles varies depending upon the cut size of meat used
Pat dry chicken well before marinating
