Kadaknath Chicken Masala
Black Chicken with Spicy Coconut and Tomato Base
Recipe:
Prep: Grind 2 each (cloves,green chilli)
, 1” cinnamon
, 1Tbsp ginger
, 6 garlic
, 6 dry red chilli
, 15 shallots
, 1/4C each (coconut, mint, coriander leaves
), 2Tbsp water
, 1tsp oil
to a fine paste
Mix 500g chopped chicken
, 2tsp red chilli powder
, 1tsp each (coriander
powder, fennel
powder, salt
)
In 2L Magic pot deluxe
layer as below,
- 1/4C water,
1Tbsp oil
- Spiced chicken
-
Coconut spice
paste
- 1/4C caramelized tomatoes
, 20 curry leaves
Cook on high for 8 mins (12 whistles)
Let pressure settle. Open, mix in 1/2C water
& serve.
Replace / supplement:
Kadaknath with country chicken
Caramelized tomato with whole tomato
Water with coconut milk
Tips:
Can add raw papaya paste as a meat tenderiser
Cooking time varies depending upon the tenderness of the meat
