Kerala Mussels in Coconut
Recipe:
Prep: Coarsely grind 1/2C grated coconut,
2 dry red chilli
, 1’ ginger
, 1 green chilli
, 1tsp cumin
, 1/4tsp turmeric
In a 2L Magic pot
layer as below,
- 1Tbsp coconut oil,
1/4C water
- 1C (100g) split drumstick
- 1C (100g) thick potato
sticks
- 1C (15nos) cleaned mussels
- 1Tbsp grated raw
mango
, 1/2tsp salt
- Ground spiced coconut
, 10 curry leaves
Cook on high for 3 whistles / 5 mins
Let pressure settle. Open, mix in 1Tbsp bottled tadka
& serve.
Replace / supplement
:
Mussels with other fish
Coconut oil with other oil
Raw mango with tamarind
Tips:
Can pressure cook the whole mussels (with shell) with 2Tbsp water in 2L Magic pot for 1 whistle to remove the flesh from shell
