Mutton Pepper Liver
Liver Stir-fry
Recipe:
Prep: Mix 250g chopped & cleaned mutton liver
, 2tsp each (pepper, coriander
) powders, 1tsp each (cumin, fennel
) powders, 1/2tsp ginger-garlic
paste, 1/4tsp (garam masala, turmeric, salt
), 1tsp oil
In a 2L Magic pot
layer as below,
- 3Tbsp oil
, 1tsp peppercorns
- 1C finely chopped onion
, 10 curry leaves
- Spiced liver
Cook on high for 6 mins (9 whistles)
Release pressure. Open, mix all with 1/2C fried onion
& serve.
Replace / supplement:
Goat liver with other liver variety
Oil with ghee
Fried onion with caramelised onion
Tips:
Cooking time depends upon the cut size
Chop smaller if undercooked
Rinse well & pat dry before cooking to avoid blood leakage
