Nadan Meen Curry
Country Style Fish Curry
Recipe:
Prep: Mix 350g fish cubes
, 2tsp each (chilli powder
, pepper
powder
), 1tsp each (oil, salt, bottled tadka)
, 1/4tsp turmeric,
10 curry leaves
In a 2L Magic pot
layer as below,
- 1Tbsp each (coconut
oil, water, bottled tadka
), 1tsp chopped ginger
- 1C sliced tomato
arranged in base, 1/2C shallots
- 1Tsp tamarind paste,
2tsp coconut
- Spiced fish
in PIP
Cook on high for 6 whistles / 7 mins
Release pressure. Open & remove PIP. Add 1Tbsp coconut oil
and blend the base to smooth sauce. Mix in 1Tbsp bottled tadka
, fish
& serve.
Replace / supplement:
Shallots with onion
Fish with prawns
Oil with sesame oil
Tips:
Use scooped tomato cups if using more than 1C sliced tomato
Make sure the tamarind paste & coconut does not touch the base of Magic pot
