Baked Zucchini Chips

Here’s a side that goes with everything. And like their potato cousins, you won’t be able to eat just one. Which is fine, because you don’t have to worry. Even if you ate the whole plate, you’d still be hitting at just over 300 calories. (Don’t eat the whole plate!)

Makes 6 Servings

Ingredients

Cooking spray

½ cup seasoned dry bread crumbs

⅛ teaspoon ground black pepper

2 ounces grated parmesan cheese

2 large egg whites

2 medium zucchini, cut into ¼-inch slices

Directions

Step 1: Preheat oven to 475°. Coat a nonstick cookie sheet with cooking spray and set aside.

Step 2: Add the breadcrumbs to a small bowl and toss with pepper and parmesan cheese. Set aside.

Step 3: In a separate bowl, whisk together the egg whites and set aside.

Step 4: Dunk the zucchini slices first in the egg whites and then roll them in the breadcrumb mixture. Place the zucchini slices on cookie sheet, in a single layer, and bake 5 minutes. When 5 minutes is up, flip the zucchini and back into the oven it goes for another 5 to 10 minutes, until brown and crispy. Serve warm.
