Portobello Burgers

Who needs beef when you got ’bellos? These portobello burgers are bursting with flavor, and even on a bun with a slather of blue cheese, it will fall well below your calorie quotient!
Makes 4 Servings
Ingredients
Cooking spray
1½ tablespoons extra-virgin olive oil
2 cloves garlic, minced
4 large portobello mushroom caps
4 whole wheat hamburger buns
1 beefsteak tomato, sliced
2 ounces blue cheese, crumbled (½ cup)
2 cups mixed salad greens
Directions
Step 1: Heat a grill pan on medium-high and coat with cooking spray.
Step 2: Whisk the garlic into the olive oil and brush the mushroom caps with the mixture.
Step 3: Grill mushroom caps 4 to 5 minutes per side and set aside. Pour out the juices and in the same pan, grill buns, cut sides down, for 1 to 2 minutes per side (if desired).
Step 4: Crumble blue cheese over each cap and top with a slice of tomato and about half a cup of salad greens and serve.
