Simple and Savory Tomato Tart

This tomato tart is a filling feast, even without using a variety of heavy cheese. Serve with a green salad, and you’re done!

Makes 8 Servings

Ingredients

1 reduced-fat, ready-made pie crust

2 teaspoons olive oil

½ cup shallots, finely chopped

2.5 ounces gruyere cheese, shredded

½ cup kalamata olives, pitted and chopped

3 tomatoes, cut into ½-inch-thick slices

3 tablespoons all-purpose flour

1 tablespoon cornmeal

1 tablespoon thyme

Salt and pepper

1¼ cups low-fat milk

1½ tablespoons grated parmesan cheese

3 large eggs

Directions

Step 1: Preheat oven to 350°. Remove ready-made crust from the refrigerator and let sit 10-15 minutes.

Step 2: While the crust sits, sauté the shallots in the olive oil until they begin to caramelize, about 3 to 4 minutes. Remove from heat.

Step 3: Place the crust in a pie pan and sprinkle with gruyere, caramelized shallots, and kalamata olives. Arrange half of tomato slices over the top.

Step 4: In a small bowl, mix together the flour and cornmeal and layer on top of the tomatoes. Sprinkle with thyme.

Step 5: Top the flour and cornmeal mixture with the rest of the tomato slices and season with remaining tomato slices, salt, and pepper.

Step 6: In another bowl, combine the milk, parmesan cheese, and eggs, and pour over the tart.

Step 7: Place pan in oven and bake for 40 minutes. Remove and let cool 10 minutes before serving.
