Authentic Madeleine Cookies

What a special treat, these buttery “shells” of sweetness. Homemade with all natural ingredients, you don’t have to be scared to have one or even two of these special cookies. While you need a special pan to make them, everything else about them is simple and delicious.
Makes 24 “Shells”
Ingredients
Cooking spray
2 eggs
1 cup sugar
1 cup flour, sifted
1 stick butter
1 tablespoon lemon zest
1 teaspoon vanilla extract
1 splash of brandy
Directions
Step 1: Preheat oven to 350°. Spray madeleine tins with cooking spray and set aside.
Step 2: Whisk eggs together in a small bowl and add sugar. Place the small bowl in a pot of boiling water and whisk gently over the heat, until the sugar melts. Place the butter in a microwave-safe cup and melt for 35 to 40 seconds.
Step 3: In another medium mixing bowl, sift 1 cup of flour. Add the egg and sugar mixture and stir together. Next add the butter and stir in. The batter will have a thick consistency, sort of like a loose merengue.
Step 4: Stir in the lemon zest, vanilla extract, and brandy.
Step 5: Spoon the batter into the madeleine tin. Bake 8 to 10 minutes, until the edges of the shells begin to brown. Let cool in tins about ten minutes; then remove and let cool an additional 10 minutes. Serve and enjoy.
