Gingerbread Cookies

You don’t have to wait for the holidays to enjoy the wonderful taste of gingerbread. Roll out the dough and cut into simple shapes for a spicy-sweet, low-calorie treat any day of the year.

Makes 72 Cookies

Ingredients

6 cups all-purpose flour

1 tablespoon baking powder

1 tablespoon ground ginger

1 teaspoon ground nutmeg

1 teaspoon ground cloves

1 teaspoon ground cinnamon

1 cup shortening, melted and cooled slightly

1 cup molasses

1 cup packed brown sugar

½ cup water

1 egg

1 teaspoon vanilla extract

Directions

Step 1: In a medium bowl, sift together the flour, baking powder, ginger, nutmeg, cloves, and cinnamon.

Step 2: In another bowl, add the shortening, molasses, brown sugar, water, egg, and vanilla, and mix these ingredients together until smooth.

Step 3: Pour the dry ingredients in and gradually fold all together until they mix into a dough.

Step 4: Pour out the large dough and break into three equal pieces. Pat each down to 1 ½-inch thickness, wrap individually in plastic wrap, and refrigerate at for three hours. (You may also decide to put 1 or 2 of these doughs in the freezer at this point.)

Step 5: Remove the dough from the refrigerator and preheat oven to 350°. Lightly flour a large cutting board or the like and roll out the dough to ¼ inch thickness. Cut out cookies with cutters and place them at least 1 inch apart onto an ungreased cookie sheets.

Step 6: Bake cookies about 10 to 12 minutes and remove from oven. Let sit about 10 minutes, then transfer to wire racks to cool.
