Angel Food Cake

They don’t call it “Angel Food” for nothing. This heavenly, light dessert can be spruced up with fresh berries or a dollop of whipped cream and still be more saintly than sinful for your dieting!
Ingredients
1 cup cake flour
¾ cup sugar
1½ teaspoons vanilla
½ teaspoon almond extract
12 large egg whites, at room temperature
1½ teaspoons cream of tartar
¼ teaspoon salt
¾ cup sugar
Directions
Step 1: Preheat oven to 375°.
Step 2: In a medium sized bowl, sift together the flour and sugar and set aside.
Step 3: In a small bowl, whisk together the vanilla extract and almond extract and set aside.
Step 4: In a third, large, mixing bowl, beat together the egg whites, cream of tartar, and salt until the mixture begins to form peaks.
Step 5: Slowly whisk the extracts, then the flour and sugar into this mixture.
Step 6: Pour into an ungreased tube pan and bake 30 to 35 minutes. Remove from oven and immediately remove cake from pan. Set on a cooling rack and let cool about 2 hours before serving.
