Spinach Salad with Chicken

The flavors of chicken and spinach sparkle to life in this delicious, fresh, and low-calorie version of a typical spinach salad. Use balsamic vinegar in place of red wine vinegar if you prefer. The calories will be the same.
Makes 4 Servings
Ingredients
1 teaspoon shallots, minced
1 tablespoon red wine vinegar
4 cups baby spinach, rinsed, stems removed
2 boneless cooked chicken breast halves, skinless
1 pint cherry tomatoes, quartered
4 strips turkey bacon, cooked crisp, drained, and crumbled
3 tablespoons olive oil
Directions
Step 1: Soak shallots in the red wine vinegar and set aside.
Step 2: Add spinach leaves to a large bowl. Slice the chicken breast into bite-sized pieces and place over spinach. Top the chicken and spinach with the tomatoes and the crumbled turkey bacon and toss all the ingredients together.
Step 3: In a separate bowl, whisk the olive oil into the red wine vinegar and shallot mixture.
Step 4: Divide salad into four bowls and drizzle on dressing or serve dressing on the side.
