Eggs for frying should always be very fresh. Use a good-quality non-stick frying pan for cooking.
Heat a non-stick frying pan until just warm, then brush with softened butter. When the butter is hot, add the eggs one at a time. It is best to break the egg into a ramekin or small bowl first, then slide it into the pan.
If you like your eggs as well cooked on the top as on the bottom, cover the pan for 30 seconds or up to 1 minute. I prefer this method to turning them over with a palette knife, as there is less risk of piercing or breaking the yolks.
When the eggs are done as you like them, take them out of the pan with a palette knife. Season with salt and pepper just before serving.
