Oeufs sur le plat

Lightly brush the inside of a heatproof egg dish with softened butter.

Place the dish over indirect heat (using a heat diffuser) and put in 1 or 2 eggs, depending on the size of the dish. I recommend breaking the eggs into a ramekin or small bowl first, then sliding them into the dish.

Cook the eggs for 3 – 4 minutes until done as you like them. If you like, place under a hot grill (broiler) for 20 seconds to cook the yolks a touch more. Serve in the dish.
