While editing Salty, Bitter, Sweet, my editors Hannah VanVels, Jacque Alberta, and I decided to italicize some non-English words for clarity, since this book contains words and phrases in six different languages. The words that do appear in italics (other than those for stress or other style-based reasons) are only those readers may not be familiar with. In addition, words that are defined and used often in the book are not italicized after the first mention. We also created a culinary guide to help readers follow Isa’s journey; turn to the back for those definitions, which might make you a little hungry.
