SPICY JALAPEÑO-CHEDDAR CORNBREAD
Reduce salt to ½ teaspoon. Add ⅜ teaspoon cayenne pepper, 1 seeded and finely chopped jalapeño chile, and ½ cup shredded cheddar cheese to flour mixture and toss well to combine. Reduce brown sugar to 2 tablespoons and sprinkle ½ cup shredded cheddar cheese over batter in dish just before baking.
