SAME-DAY DELI-STYLE RYE BREAD
If you don’t have time for a sponge, this loaf can be made the same day, but the flavor won’t be as complex, and the crumb will be finer and more uniform (like sandwich bread).
Omit sponge. When assembling dough in step 2, increase amount of bread flour to 3¼ cups, increase rye flour to 1¾ cups, increase yeast to 2¼ teaspoons, and increase water to 2¼ cups.
