Substitute 1 pound Yukon Gold potatoes, sliced ¼ inch thick, for mushrooms and increase microwave cooking time to 4 to 8 minutes. Substitute 4 ounces shallots, sliced thin, for leeks and rosemary for thyme. Increase amount of crème fraîche to ¼ cup and substitute ¼ cup chopped pitted kalamata olives and 1 teaspoon finely grated lemon zest for Dijon mustard. Substitute goat cheese for Gorgonzola.
