25. Chicken Thai and Peanut Sauce

Ingredients:

4 chicken thighs, cut into bite-size pieces

2 tablespoons + ¼ cup peanut oil

1 cup peanut butter

3 tablespoons toasted sesame oil

4 tablespoons soy sauce

1 tablespoon lime juice

1 clove garlic, minced

1 teaspoon powdered ginger

2 teaspoons hot sauce, if desired

2 red bell peppers, chopped

4 tablespoons toasted sesame seeds

4 green onions, thinly sliced
Directions:
Heat 2 tablespoons peanut oil in a large frying pan.
Add the chicken and set slow cooker on low then cook covered for about 2 hours, until no pink remains.
Meanwhile, mix together the peanut butter, ¼ cup peanut oil, sesame oil, soy sauce, lime juice, garlic, ginger, and hot sauce.
When the chicken is done, add the red pepper and cook for 15 minutes more.
Divide the chicken and peppers between four plates and top with peanut sauce, toasted sesame seeds, and green onions.
