Not Your Basic Granola

Home-baked granola tastes leaps and bounds better than anything boxed, not to mention being much healthier—but have you tried making it with peaches? It’s a wonderful way to add a sweet hint of summer to the usual mix of dried fruit and nuts. We love having it on hand for rushed breakfasts. Another good thing about granola is that you can use any nut you think will pair well with your ingredients—we like pecans, almonds, and hazelnuts. And if you don’t care for cherries, try dried apricots, goji berries, or golden raisins.

Hands-on time: 40 minutes

Total time: 40 minutes, plus cooling time

4 cups rolled oats

2 cups unsweetened coconut flakes

1 cup coarsely chopped walnuts

1/2 cup honey or sorghum syrup

1/3 cup salted butter, melted

1 teaspoon ground cinnamon

1/2 teaspoon kosher salt

1 cup chopped Dried Peaches

1 cup dried cherries

1. Preheat the oven to 350°F. Line a large baking sheet with parchment paper.

2. Combine the oats, coconut flakes, and walnuts in a large bowl. Whisk together the honey, melted butter, cinnamon, and salt in a small bowl. Drizzle the honey mixture over the oat mixture. Toss to coat the oat mixture with the honey and butter.

3. Spread the mixture evenly over the prepared baking sheet. Bake on the center rack for 30 minutes, or until deep golden brown, stirring every 10 minutes. Let cool.

4. Store in airtight containers at room temperature for up to 1 week. Stir in the peaches and cherries just before serving.
