Peach Sorbet

For parents, summer is all about trying to create kid-friendly dishes that take advantage of what’s in season. Peach sorbet checks off all the boxes: a warm-weather treat that’s super easy to whip up and makes kids giddy with excitement. Every time we watch our children’s anticipatory faces as we lift a tray of sorbet out of the freezer, we go back to feeling like kids ourselves. What is better, in the summer, than knowing a frozen dessert is coming your way?

Use peaches that are as soft as possible; they’ll be the best for flavor and texture. Before serving, let the sorbet soften at room temperature for fifteen minutes, or use a scoop that’s been dipped in hot water.

Hands-on time: 5 minutes

Total time: 5 minutes, plus churning and overnight freezing time

21/2 pounds very ripe peaches, pitted and coarsely chopped

3/4 cup plus 2 tablespoons sugar

2 tablespoons fresh lemon juice

Pinch of kosher salt

1. Combine the peaches, sugar, lemon juice, and salt in a food processor; process until smooth.

2. Pour the mixture into an ice cream machine. Process according to the manufacturer’s instructions. Transfer to a freezer-safe container and place a piece of parchment paper directly on the surface of the sorbet. Wrap in plastic wrap and freeze for 4 hours or up to overnight before serving. The sorbet will keep in the freezer for up to 1 week.
