A beautiful single tier cake is perfect for many occasions from birthdays and anniversaries, to intimate wedding celebrations. A simple offset arrangement gives a design a focal point that is natural and modern. This type of arrangement is quick and easy with a single flower and a few bright leaves placed delicately near the edge of a cake. If you want to make it more elaborate, follow our simple techniques for using multiple flowers and all of the pretty fillers.
1. Position and secure the closed peonies, offset on the top of the cake.
2. Gently press and secure a small amount of fondant between the peonies.
3. Position and insert the peony leaves and lilac leaves at the base of the peonies.
4. Fill the openings between the peonies with hydrangea and all-purpose buds.
5. Tape together almost all of the lilac flowers and lilac buds into a tight bouquet, leaving a few extras. Place the bouquet into the center opening between the three peonies, pushing the stem into the fondant between the flowers to secure. Use a few additional lilac flowers to fill any small holes.
6. Tape together the five greenery leaves at varying lengths. Position the leaves between two of the peonies, pushing the stem into the fondant between the flowers to secure. Let the leaves hang out a bit over the edge of the cake. Finish the cake with the ribbon (see Finishing Touches).
When working with round flowers like closed peonies or ranunculus, use all-purpose buds to fill in the small gaps around their bases. They are the perfect shape!
Make this variation of the offset arrangement using ranunculus and freesia and following the techniques for the closed peonies and lilacs cake.
