Slow Cooker Tzimmes
Tzimmes is a sweet Jewish dish that consists of a variety of fruits, veggies and sometimes meat. Like this recipe, the traditional version is tossed with honey and cinnamon, then cooked slowly over low heat to blend all of the flavors into one special treat.

1/2 medium butternut squash, peeled and cubed
2 medium sweet potatoes, peeled and cubed
6 medium carrots, sliced
2 medium tart apples, peeled and sliced
1 cup chopped sweet onion
1 cup chopped dried apricots
1 cup golden raisins
1/2 cup orange juice
1/4 cup honey
2 tablespoons finely chopped crystallized ginger
3 teaspoons ground cinnamon
3 teaspoons pumpkin pie spice
2 teaspoons grated orange peel
1 teaspoon salt
Vanilla yogurt, optional
1. Place the first seven ingredients in a 5- or 6-qt. slow cooker. Combine the orange juice, honey, crystallized ginger, cinnamon, pumpkin pie spice, orange peel and salt; pour over the top and mix well.
2. Cover and cook on low for 5-6 hours or until the vegetables are tender. Dollop servings with vanilla yogurt if desired.
