, for serving
-
Rub wings with olive oil and salt, including under the skin, and place chicken on a baking sheet or in a large dish.
-
Refrigerate for a minimum of 1-2 hours.
-
Preheat the grill to medium-high (350°F - 400°F).
-
Generously coat the wings with half the Chipotle Honey Glaze.
-
Place wings on the grill rack over indirect heat.
-
Grill for 20 minutes, and then move the wings to direct heat for 5-10 minutes to char slightly.
-
Remove chicken from the heat when a digital thermometer registers 165°F.
-
Baste the wings with the remaining sauce and sprinkle with sesame seeds before serving with Pickled Red Onion Relish.
Be sure to leave an inch or two of space between each wing to allow for a bit of good heat circulation. Aim to get just a bit of char on every delicious wing.
