Pulled Chicken Salad

There are some fancy plastic and metal claws for pulling meat, but a couple of good ol’ fashioned forks will do the trick as well. You’ll also want to use some heat-resistant gloves to allow you to work with your hands when working with hot meat.
My Chicken Can (found in Poultry), cooked
3 eggs, hard-boiled
½ cup mayonnaise
¾ cup chopped celery
2/3 cup sweet salad cubes (pickles)
¼ cup chicken broth
2 tablespoons sour cream
1 teaspoon salt
1 teaspoon freshly ground black pepper
1 teaspoon celery seed
1 teaspoon garlic powder
Torn lettuce, for serving
Crackers, for serving
Croissants or Sandwich bread, for serving
  1. Remove the skin, and debone the chicken.
  2. Using 2 forks in a shredding motion, pull the whole chicken and place in a large mixing bowl.
  3. Chop the hard-boiled eggs and add to the bowl.
  4. Stir in the mayonnaise, celery, salad cubes, chicken broth, sour cream, salt, pepper, celery seed, and garlic powder until well blended.
  5. Cover and chill in the refrigerator for a minimum of 1 hour before serving.
  6. Serve on a bed of lettuce with crackers, or with sliced bread for sandwiches.
