Squash and zucchini are great summertime grilling subjects but they can be a hassle to keep from falling through the grill’s grates. Often I’ll use a grill basket or “wok” to keep everything contained neatly on the grill and still allow for browning and char. Creating foil pouches like, we do here, is another easy option.
2 yellow squash
2 zucchini
1 large onion
½ cup Citrus Chile Butter Paste

Preheat the grill to medium high heat (350°F - 400°F).

Slice the squash, zucchini, and onions, and place into a large bowl.

Add the Citrus Chile Butter Paste and toss to coat.

Using heavy duty aluminum foil cut 6 pieces that are 12 inches long.

Spray one side of the foil pieces with cooking spray.

Divide the vegetable mixture by six, and place on the cooking spray side of each packet.

Fold the packets to completely seal and place on the grill, seam-side up.

Grill the packets about 20-30 minutes until the vegetables are to desired tenderness.
Feel free to change up the veggies in this easy side dish. Peppers, potatoes, mushrooms, green beans, and even hamburger patties work well, too.
