Garlic Quattro Formaggi Topping  
Makes 4 cups     15 minutes     Stove    
Quattro Formaggi literally means “four cheese,” which translates to four times the flavor in this creamy cheese sauce topping.
8 ounces cream cheese, softened
½ cup (1 stick) unsalted butter
4 ounces shredded Parmesan cheese
4 ounces Gruyere cheese, grated
4 ounces Asiago cheese, grated (or Romano)
½ cup heavy whipping cream
½ cup half ‘n half (or milk)
1 cup chicken broth
1 tablespoon minced garlic
1 teaspoon kosher salt
½ teaspoon freshly ground black pepper
  1. Cut the cream cheese block into 1-inch cubes.
  2. In a medium saucepan over medium heat on the stovetop, add the butter, cream cheese cubes, Parmesan cheese, Gruyere cheese, Asiago cheese, whipping cream, half ‘n half, chicken broth, garlic, salt, and pepper.
  3. Heat through, stirring constantly, about 3-4 minutes.
  4. Reduce heat to low and cover.
  5. Simmer for 5-10 minutes until smooth and slightly thickened.
  6. Remove the sauce from the heat and set aside to thicken for about 5 minutes before serving. Note, it will not thicken much before it is removed from the heat.
  7. Once the sauce is thicker, drizzle over meat or vegetables, or stir in cooked pasta to serve.
