ne of the special things about barbecue is there is so much of it you do with your hands. Good barbecue isn’t just cooked up,
it’s handcrafted.
Author and grill master, Steven Raichlen recommends that you always mix spices with your fingers so you can effectively break down any small clumps. Of course, you’ll get a better mix, but there’s also something therapeutic to it. It’s kinda like the grown-up version of playing in the sandbox. It’s just fun.
Also, as inferred by a barbecue rub’s name,
you rub in these spices with your fingers.
This physically embeds the oils, salt, and flavor into the pores of the food. If you like to work with your hands, then barbecue is the food for you.
