The right pan size is important to the success of this delightful homespun dessert. If you don’t have an ovenproof 10" skillet that is at least 2" deep, cook the apples in a skillet and transfer to a deep 10" round baking dish.

APPLES
2 tablespoons Better Butter or trans-fat free spread
3 medium Golden Delicious apples, sliced (1 pound)
2 tablespoons brown sugar
1 teaspoon apple pie spice
PANCAKE
2 eggs, separated
Pinch of salt
1 tablespoon confectioners’ sugar + extra for dusting
¾ cup all-purpose flour
¼ cup soy flour
1 teaspoon baking powder
¾ cup whole milk
1½ teaspoons lemon extract
1. Preheat the oven to 375°F.
2. To prepare the apples: In an ovenproof 10" nonstick skillet, melt the Better Butter or spread over medium-high heat. Add the apples, brown sugar, and spice. Cover and cook, tossing frequently, for about 4 minutes, or until softened. Remove from the heat.
3. To prepare the pancake: While the apples are cooking, place the egg whites and salt in the bowl of an electric mixer. Beat on low speed for about 1 minute, or until foamy. Increase the mixer speed to high. Beat, adding 1 tablespoon confectioners’ sugar, for 1 to 2 minutes, or until soft peaks form. Set aside.
4. In a mixing bowl, combine the flours and baking powder. Stir with a fork to mix. In a small bowl, use a fork to beat the milk with the egg yolks and extract. Add to the dry ingredients. Stir to blend. Transfer the whites to the bowl. Fold to mix. Dollop the batter over the apples.
5. Bake for about 15 minutes, or until puffed and golden. Dust lightly with confectioners’ sugar. Cut into wedges.
