Tofu Scramble

Ingredients:

1/2 block firm tofu, crumbled
●
1 cup spinach
●
1/4 cup zucchini, chopped
●
1 tbsp olive oil
●
1 tomato, chopped
●
1/4 tsp ground cumin
●
1 tbsp turmeric
●
1 tbsp coriander, chopped
●
1 tbsp chives, chopped
●
Pepper
●
Salt
Directions:
- Heat oil in a pan over medium heat.
- Add tomato, zucchini, and spinach and sauté for 2 minutes.
- Add tofu, turmeric, cumin, pepper, and salt, and sauté for 5 minutes.
- Garnish with chives and coriander.
- Serve and enjoy.
